Final step in restoration, need to paint engine to original factory color-shine, what paint should I use, bike is show room condition, all NOS parts or original parts. What paint do you recommend?

If it is true what you said - I would not "paint" the motor. I would tear it down and powder coat it considering the rest of the bike is in show room condition. Might as well finish it off correctly.
