currently looking at the douglas A5 wheel, is it better to go with the 8x8 3.0+5.0 of the 9x8 3.0+5.0? I'm no expert with rims and so if someone could explain the difference it'd be much appreciated

For front rims you have the option of the 11 inch rim in either the original gold, from EBAY or otherwise. Douglas makes a chrome front rim but the 11 inch rim leaves one with limited tire choices.
The other option is a 10 inch custom rim from xowner or from Douglas which opens up more choices for tires. Xowner does group buys and pretty sure Douglas does not stop production to make just one so it may require a batch. The Douglas 10 inch front rims may be on EBAY but I get mine from xowner.
8x8 is eight inch rim, eight inches wide. 3.0 is the offset from the back of the rim flange to the outer edge or the rim, the 5.0 is the rim flange to the outward facing side of the rim.
I assume the 9x8 is a nine inch rim as the offset is the same, and would require a nine inch tire. Where as the eight inch rim would require an eight inch tire.
The style/brand of rear rim is really dictated by the terrain you ride and how you ride your machine.

And as for the front hub is it able to be sandblasted and re powder coated?

would a 22x11-8 tire fit on a 8x8 rim or would it be better to go back to original size with a 9x9 rim and get 20x10-9 tires?

It will fit just fine. 22" is a little tall for my liking, but I like them wide. I personally would run the 20x10x8, thats what I run on My Tri Z and my 450R (paddles and holeshots).

22" tires are nice if you need the ground clearance. Or if you're looking to get the most top end speed out of your machine. It all depends on what terrain and style of riding you prefer.
