I just picked up a 350 triple yesterday for a possible future project. I've always wanted a Kawasaki triple but this is the first one to pop up in my area for sale that I've seen. Not really restorable but should make for a good engine swap into something else once I rebuild the engine..... lol

Yea 3 cyl are super smooth compared to single, dual, or quad cylinders. Don't know anything about that bike, but my dad has a perkins diesel in a backhoe that's 3 cylinder and dang does that thing purr.
Good luck with whatever you end up doing with the bike/engine. A 3 cyl 3 wheeler would be pretty neat, but the engine might be a bit heavy for normal trail riding I'd think? I have a blaster frame with a TX500 engine (500cc twin) that specs out at 49hp stock, should be a fun machine. Any idea what the HP is of that 350?

40's should be pretty fun, drag bike makes sense. I'm sure it wouldn't be all that bad to ride on trails, just takes a little skill to overcome the extra weight =).
