Basically, a boost bottle holds the fuel/air mixture called a charge in between piston intake strokes. Without a boost bottle, the unused charge can sometimes flow back into the carb. This is called "spit back". The Bottle and tube of the boost bottle give a place for the unused charge to expand into when the reed valve is closed during the engines cycle. When the reed valve opens back up, the low pressure of the piston starting its intake draw and the start of new charge rushing past the boost tube causes the stored charge to blow out of the boost bottle first creating a sort of "supercharged" effect. The engine will have a ready mixed charge waiting for it immediately without the hesitation of the carb having to atomize the new charge first. A boost bottles benefit can really only be seen at low to mid RPMs - at higher engine speeds, the physics of the situation and the speed at which the engine needs the new charge prevents the bottle from really being utilized.
