How in depth are you wanting to go? Start be removing an easy part and try to make it look new. Time, patience, and money are your biggest friends.

Start by taking pics of everything in its current state, lots of pics. Remove all the easy stuff like body panels and gas tank and take pics of it in a naked state. Start tearing it down and take your time and label everything. Then you need to decide what can be restored or what will need to be replaced. If you haven't yet, get a manual. It will be a godsend. Also looking at parts diagrams like Service Honda will put into perspective where a lot of things go. Remember it goes back together the same way it came apart.

Dig in, have fun, and take your time. Do one thing at a time then move on to the next task. Trying to do multiple things at once will only cause frustration and mistakes.

I respect the fact that you are wanting to learn this stuff, but if you can't look at something and tell if it needs to be replaced or not, well this might be a little over your head. But there is only one way to learn and that is digging into it. The computer isn't going to turn a wrench for you. There is only so much you can learn by asking questions on forum, sooner or later it comes down to you either have the ability or you don't.

So I have to ask, is the link in the signature, to your own atc shop?

Look at it and figure out what you want to do, then all there is to do is DO IT. I also am curious about your atc shop. What do you do there? These old trikes aren't rocket science, start taking it apart and take pics and make notes if you need to.

I think your just meaning to replace whats worn out and freshen up the rest. Not a "restoration", just freshening it up a bit to look and run well..............

All the specs for whats re-useable and what isn't, as well as common sense will lead you the way :beer
