info on Jetting carbs?

I was wondering if someone can help me understand how to determine the new jet size I should use on my carb. I have a 81 185s. I have put a after market dg exhaust on it. in the instructions it says to re jet the carb for best performance. Besides the exhaust I also have a mikuni carb I got off ebay for it. it all runs good, but if it can run better i'm all in. thanks in advance for any info.

i recently put a 105 main jet in my 185s that has a dg pipe and uni filter. its running good and plug looks fine but havnt done a proper plug chop yet
