Melt (not boil) 3/4 cup butter. Big deep pan.
Whisk in 3/4 cup flour, 3/4 tsp salt, 3/8 tsp pepper.
Gradually add 3 cups of milk while mixing, do not let boil!!
Mom made 18 onions from this. Chop off ends, peel until they are just onion. DON'T BOIL ONIONS BEFORE DUMPING THEM IN!!
35 to 40 minutes, medium or so - NEVER BOIL

Great recipe DC. We're all full and cleaned up here,but will try it sometime.

Ok, sounds like a good recipe, but what goes good with all those onions? Is this a Turkey day only recipe? I want to try it. :)

Thanks guys. Turkey day is when everyone is asking about them (wish I got it posted up last night).
They are great with turkey,chicken, meatloaf, almost anything you'd have mashed potatoes with.
I ate 4 today and stole 2 to take home.
If they get cold, the sauce coagulates but a quick nuking fixes that; sometimes I'll add a hair more milk.
If made right, they end up together but your fork breaks them up easy.
Great, now I'm hungry :lol:

Lucky for us we are having thanksgiving at my wife's family tomorrow. Her dad will love them! I'll try this.
White, yellow, or red onions?

Im definitely gonna make these! I'll probably try white or yellow onions. For me, reds leave a lot of after taste, so I like to use them in smaller quantities. Thanks for this recipe Dirtcrasher.

They are almost sexual! I scorched the pan a little, so I put them in a casserold dish. Popped them in the oven for a half an hour at 200. I'd like them a little softer. Next time I'll boil them for a few minutes before they hit the sauce.

^ Your very welcome. She uses a large casserole dish and they fall right apart.
Thats close to what they should look like. Maybe creamier and cookied a bit longer. I'll show the picture to the boss (mom) :D
There won't be a strong onion taste at all.

I used the boiling onions. Everyone liked them. I'll definitely make them again. Give mom a kiss for me.

OK from the looks of the onions in those pictures the look tiny,, hell I was thinking there's no way I will fit 18 size baseball size onions in one little pot! You guys have tiny onions back that way or what?? Lol... but Dam they look good.

Once you peel the crap and ends off, they end up being about a medium size.

Those are called boiling onions the are like a pearl onion only a little bigger. Pretty sweet flavor.

I made them tonight using yellow onions, they're a bit bigger than in the pic above. I love it! Would've never thought of a recipe like this. Now, it's part of my cookbook! Thanks again! :)
