So I have a Yamaha 125 and it will start up just fine and idle great but without the choke installed, now as soon as I thread the choke into the carb it dies. It's like it is sucking way too much air from the choke hole.i unhooked the air intake and it is sucking air so I cannot figure this out ! It's very frustrating

I don't know the yamaha design really, but for a honda if the choke needle was removed, it would add more fuel, which is basically what a butterfly choke does, so I'd say your main/idle jets are plugged, and the only way it gets enough fuel to run is with the choke all the way out.
Might want to take the carb apart and check it out atleast.
Another thing to watch out for is intake boot leaks which would make it run leaner than normal, again the choke could give enough fuel to make it run again.
