Okay, with stock jets and carbs that are tuned for elevation of 400ft do I need to rejet and or adjust carb for 5000-8000ft?

nope, your bike will run the same from sea level all the way up to 40,000 ft on the same jets.....;)
Yes, you have to re-jet.

No, but it will run pretty rich after 6,000 or so. At 8,000 it will feel week as a kitten, but you won't harm anything.
Providing you are starting at 3,000ft or more VS riding up there from 400' I'd start off by dropping 2 sizes on the pilot, lower the needle one notch and drop the main 4 sizes in my shop before heading out. Take at least a small screw driver as you'll want to adjust the air and screws as you climb. That's on a 300cc 2 stroke. My high elevation experience is strictly on smokers. The guys we climb with that ride 4 strokes seem to cope with altitude change better than I do.
Best take some brass and tools, don't let poor jetting ruin your trip.

Well, I'll just take more plugs then, I don't wanna mess with banshee carbs.

Good plan. When you foul the first plug, turn it around, change the plug and start driving back down.
