I am currently building a drag bike. I am going to remove the rear shock, and replace it with a strut. I am making the strut. I am just going to take some a piece of tubing and weld a mount ( an eye) at each end. My question is, what diameter tubing should I use and how thick? Keep in mind that this bike will have a big bore 2 stroke Yamaha motor in it.

That was a joke.
I have a solid billit strut that is very strong, looks damn good, and is very light weight.

Not to stray you from fabricating one yourself or anything, but Ronnie (yamahahondaman) has hooked me up big time today. Im not sure if this is supposed to be public knowledge, but today arrived the first adjustable one he made. If your interested I can get you in contact with him, because his stuff is all either billet, or stainless and you WILL NOT be dissapointed... I promise you that. He also makes just the solid struts to any length you want, in a few different designs.
Like I said, Im not trying to stop you from building your own because I think doing your own work on your own machine is the best way to do it. The ones I have seen are all either billet or aluminum. Ive heard steel ones will crack and break if it takes much abuse (the dunes down here). The best way to do it, is find out how much room you have where the eyes will be. You'll wanna run "link-less", straight from the swinger to the mount on the frame. If both of those ID widths are the same, no big deal. If not, make your strut the thickness of the smallest one. Then add shims or bushings on the larger one. Are ya following me?
Again, for the money alone, much less time, Ronnie is the way to go though. Ill post pics of the new adjustable one here in a day or two once I get it on my dragzter.
