So I bought a 250sx that was done pretty nice, but then noticed that the sx had a drive shaft suspension with a bolt on box i was woundering if i took all that off if you would be able to put a sprocket and a swingarm suspension on these???

The SX is already suspended... what's your plan ?

The 250sx motor is a shaft drive unit. It would be very difficult to change it to chain drive.

Yeah, why would you wanna do THAT? The SX is shaft drive, and that's sort of the point. You get reverse, no chain & sprockets to get dirty and wear out, etc. Granted, they say you lose a lot of power with a shaft drive, which I imagine is true, but if you want major performance you wouldn't want an SX anyway.
