You need rearsets on a 250R with the frame about an inch off the ground. Then you could drag knee on the flat track.

suzuki has a prototype reverse trike out that is a cross between a jetski, crotchrocket, and snowmobile, very wierd looking. saw one three days ago, limited produstion test model, cost.... a wopping 17,000! cool as all hell, back tire is basically a car tire! will try and find a pic and post one up.
