Ok,
I just bought a replacement on/off switch for the '85 honda 200x.
The original was faulty and the wires were cut (back in '86)
My question is:
The new switch has the male portion of the wires but where can I get the female side of it all? do I need to by an entire wiring harness?

Well, if the wires are already cut anyway, just peel them back a little to expose the wire. Then wrap them around the male ends and black tape the hell out of them. It's a cheap and cheesy fix, but if they're already cut then why not ? Or you could go to a electrical store and buy some female ends, peel the wires back a little, slide them in, then crimp them down.

either crimp new ends on or get a new harness

Or, cut the male plug off, then hot solder each wire and wrap it with self-amalgamating tape. Dust, dirt, water, crud and corrosion proof. Plus, if done right, it's permanent! No chance of a bad joint a couple of years down the line.

Depends... Did you buy a real nice switch with little fading? Then I'd look for a harness (about 20$) in good shape and swap it. The old harness probably got butchered just like the on/off switch....
