Ive never fixed a rusty/leaking tank yet. But i have used the tank sealers on customers tanks ive made to prevent rusting. POR-15 makes one just for bike tanks, its smaller so you have less waste. Call around to the local car parts places. Tell them what you want to do and they will most likly have a product there. Make sure you get tank cleaner also, it would make sence to package them togther since youll never really need just one. It will clean all the old varnish and scale out of the tank. Also dont plan on going riding the next day. WIth no circulation thru the tank it will probly be about a week before you can put fuel back in it. As for how hard, it easy. Just some brands have you baby sitting it. One i used wanted me to roll the tank every 4 hrs, another just said to slosh around to coat the hole thing then dump the extra out and let it dry.
