Its kind of like a hillbilly version of a chopper. A chopper is kinda only really defined .. to me anyway.. like the bikes in the Easy Rider movie. A real "2 wheeled" chopper. A choppeye is anybody else's cockeye'd version from there. Really an open door. But mostly the wrong door. See?
