could be a number of things, but it most definitely sounds like you are fouling your plug...but it could be fuel starvation, the time it sits while you change the plug could be enough time to get fuel to it running again...
let us know how that plug looks when you take it out...is it wet and oily more info needed

I am going through the same thing on my 84 250R ... I can ride for at least an hour then it suddenly just bogs down and dies. I change the plug and ride for another hour...etc. I am almost certain it is too large of a main jet that is fouling the plugs. I have a smaller size jet to put in this weekend but in the mean time just make sure I have a spare plug.....

Three wheeler guys probably have the biggest balls out of all the ATV/Motorcycle riders. You just have to be a little twisted to ride them, and you have to be a great rider to do so.

Id like to see where this post goes as I have the same problem on my 85 250R motor. I wonder about fuel starvation as I use a inline fuel filter, but - jet's is the way I was leaning, Ill keep a watch on this thread!

so you only run full throttle for an hour straight? i am pretty sure i don't believe that. have you ever done a plug chop to see if your jetted to fat??? why waste a pile of plugs ???? and i would like to see where you can ride full throttle for an hour around here without hitting a cactus,,,,,,,,,,
My buddys 84' r runs funny like that too. The mix is right. We'll be riding for a few hours and all of a sudden it dies. Let it cool down a while and it fires right back up. I'm starting to think its electrical too, the only other thing I can guess is the carb was getting too hot cause it only happens in the summer. We've changed carbs(stock, flatside) a couple of times and it still happens....Beets

so none of this makes any sense ,, a jet change takes 3 minutes,,
i use one of those craftsman screwdrivers with the removable tips and it fits the main jet perfectly, takes a minute or 2 thats for sure. is there an on off valve on the gas cap like the 250sx has? i remember not turning that bad boy on and it would die out after a few minutes of riding. maybe you need a new gas cap/vent tube?
