After I finally get the screws out (when I get a set of LH spiral bits or an easy out), is where can I get replacement screws that are something other than a phillips head, like a hex bolt or something easier to remove?

Try your local hardware store. Bring in one of the screws and see if they have the same size but with a hex head? If not try tapping the hole one size larger and find a hex/allen screw that would work.

A hex bolt won't work on all holes. They get stuck on the cover and don't bottom out. Especially on the top bolt holes.
You can use allen head bolts
