I'll try my best:
All engines will drop in (200s, 185, 185s, **200M, **200ES(big red) **NOTE may be clearance issues with electric start and frame. Even the 200X will drop in.
As far as fenders go - noting else fits - neither front or rear, although a little creativity wil go a long way here. Rear axles are different between models too. The 200M and 200ES share the same rear fenders exept decals of coarse.
You can swap front ends as the neck on all models listed above have the same neck diameter and length - so you could put a 200s or even a 200X front end on your ATC200 (by front end I mean triples - forks - axle tire fender brakes etc).
185s and 200s share common fron fenders as well as headlight buckets and headlights. ATC200 and 200M share common headlight and headlight buckets.
Front and rear brakes will interchange between all models listed above as well except for the 200X which is disk brakes.
Carbs will all swap out, but I believe that all air boxes are only common to their respective machines. Again. some creativeness will go a long way here.
The ATC200s and 185s have 8" wheels - the ATC200, ATC185, ATC200M and ATC200ES have 9" wheels. 200s and 185s have 4 / 130 bolt patterns while the M, ES and plain 200 have 4 / 150 bolt patterns. Pre 1983 ATC200 have split rims - 1983 and after are 1 piece. All models fit modern quad hubs - which is a great swap out for 4 / 110 modern aluminum wheels.
Also - I believe (except for the 200X) all 200 series have common front and rear axle beaings.

Thought I would chip in here...
For ATC200e, you will have to notch the frame or remove the electric starter. The rest is a direct drop on.
Atc 200e/es/m fuel tank fits right up to the ATC 200.
Front and rear brake components are the same.
There are many other components that interchange such as throttle assemblies, handlebars e.t.c
Basically anything from the 200/200S/200E/185/185S series will work. Electric start will take mod. if you swap motors ,but basically all the parts interchange, with exception of the axel and some modle fenders. The 200's had a bolt on set up, the 185s had a single piece.Carbs all all the same also, unless you count the 200X.

I have a 1983 185s, I want to add a battery and charging system, will the regulator/rectifier harness from a 200e plug into my harness and work? thanx.
You might be better off using the complete 200e wiring harness. Do you just want the battery for 12v accessories?

I just want it to power accessories, not to power a starter, I got a small winch for free and thought i might be able to power it if i added a battery and charging harness.
also the 200es has a drive shaft.if u were to use the top end of a 200x on a 200m,e,es u will have to either grind down the fins or slightly bend the frame so that u have clearance for the starter.

Great thread. I know it is old.... but so am I. I just acquired an 83 200. I have yet to get it started, but I think I can get it running.
Actually, the tou and rules ask us to continue with threads NO matter how old they are.
IF you can find a small lawnmower gas tank (or clean yours to perfection) and start with cleanclean fuel supply, should prob go thru the carb and then run it to make sure it shifts, THEN you can spend time making it pretty and fixing little stuff.
Oh, and change to oil too if it's been sitting.
New trikes are fun to get going.
