I bought a 185s a year or two back, and it was rattle-can painted camo. A lot of it is cracking off, but I can't get all of it off. Is there something I can let the plastic parts soak in, or an easy way to remove the paint?

goto a auto paint store and ask for bumper stripper in a spray can... its a stripper made to get the paint off of urethane and plastic bumpers. follow directions and all should be well.
I have had great results with "spray paint" remover... let it sit for a few minutes, then blow it off with a pressure washer while the paint is still soft..

brake fuild...it will peal off like chicken skin and wont hurt the plastic
Permatex gasket remover. Works like magic. Doesn't harm plastics at all. Used it on tanks, fenders, and even nasty painted bolts and things. It can be bought at auto zone, advanced auto, napa, etc.
