is there some sort of adjustment? Since there is no clutch lever you can't feather it into gear so when I click it into first it literally JUMPS into gear and every gear after.

Your idle speed must be set too high, lower it and you will not have any jump

Either the one way/centrifugal clutch is dragging or the manual clutch (shifter actuated) is mis-adjusted.
Like was stated above, make sure your idle isn't too high (which would cause your centrifugal clutch to drag).
If that is good, try adjusting your clutch.
Procedure to adjust the manual clutch (paraphrased from the service manual):
1. Loosen the adjusting screw lock nut
2. Slowly turn the slot headed screw counterclockwise until resistance is felt. Stop.
3. Turn the slot headed adjusting screw 1/4 turn clockwise
4. Tighten the locknut (hold the slot headed screw in position)
Try your shifting now.

X2, to what wonderboy said, adjust your clutch. More than likely that's your issue.
